Assistant Professor, Family and Consumer Science
Discipline: Food Bioprocessing
Education
- Ph.D. - Bioresource and Food Engineering, University of Alberta, Canada
- M.S. - Food Science and Technology from, Autonomous University of Chihuahua, Mexico
- B.S. - Chemical Engineering, Autonomous University of Chihuahua, Mexico
Research Interests
Research interest The generation of waste and byproducts is ubiquitous throughout the entire agricultural chain. Instead of landfilling, these materials can be turned into value-added products, such as fine chemicals, micronutrients, ingredients, and additives. Creating value from waste and byproducts is multidisciplinary in nature since it involves the application of a number of disciplines to create a desirable modification. My research strives to integrate concepts from engineering, chemistry, nutrition, and microbiology to develop effective, affordable, and safe solutions. Overall, my research activities can be highlighted under four major headings:
- Valorization of byproduct streams
- Synthesis of sweeteners
- Green extraction methods
- Engineering technologies
